BULLSH&^%$.T


In the last couple of days a Bull has decided that he rather likes our garden, yes we do live in a first world country but there are cows roaming around our village, no one bothers them and they don't bother us, however this one in the photo, seems to like to use the trees as a back/tummy scratcher, if you look carefully this is the 2nd tree he has scratched himself with, the funniest thing though is that when he walks into the garden the poor cats almost die from a heart attack, they try and run but their legs just don't move fast enough, they ain't seen no 4 legged thing that big before....

This Dog has had its Day


Recently our neighbours moved in, and they brought with them their lovely pets, all 8 of them actually. Anyway this is a picture of one of their precious Sharpays (forgive spelling) AKA wrinkly dogs. has this one had its day??? I wonder if there is plastic surgery for dogs (-:

A great Easy delicious Recipe

Spicy Macaroni and Cheese

One and a half cups finely chopped onion
2 large cloves garlic crushed
One and a half tablespoons chopped pickled jalapeno chillies
1 teaspoon ground coriander (optional)
One and a half teaspoons ground cumin
Quarter cup butter
Quarter cup all-purpose flour
4 cups milk
One can plum tomatoes, chopped
Salt and pepper to taste
One and a half cups chedder cheese
One and a half cups Gouda cheese
One pound of Macaroni
One cup bread crumbs
One cup freshly grated parmesan

In a heavy saucepan cook the onion, garlic, jalapenos, corriander and the cumin in the butter over moderately low heat, stirring, until the onion is softened, stir in the flour, and cook the mixture stirring for 3 mins.
Add the milk, whisking continously, bring liquid to the boil, keep whisking and add in the tomatoes, add a dash of red wine to add to the flavour. Simmer for 2 mins, add salt and pepper to taste.

Boil macaroni for 6-7mins, or until its barely al dente, donot overcook, drain well and in a large bowl combine with tomatoe mixture
Stir in the cheese and transfer to a buttered 13-14-by-9-inch shallow baking dish.
In a bowl combine parmesan with bread crumbs, add a tiny bit of oregano
Sprinkle over the macaroni mixture.
Bake the Mac and Cheese in a pre heated oven at 180C for 20-25 mins or until golden and bubbling

Serves 6-8

Its delicious, give it a try
PS Jalapenos are not that hot

The Westcliff Hotel Johannesburg





Its always been a dream of mine to stay at The Westcliff Hotel, so I thought why not, each time you go home you should do something that a tourist would do, so after the wedding we checked in to this 5 star luxurious place, to me its the prettiest hotel in Johannesburg. It's high on a hill and has beautiful views of the amazing amount of trees that Johannesburg has, did you know that Johannesburg as a city has the most number of trees than any other city in the world. The hotel is pink in colour so you definately cannot miss it, but it suits its character. A full English breakfast was included the next day and what a perfect day it was, not a cloud in the sky

A Cat, thank goodness, has 9 lives



Hi there

Today is sunny and beautiful, no spring here just straight to summer, 29C 95% humidity, but thank goodness the washing dries ha ha.
just an update about our dear Oscar wild (the ginger one), he had a run in with 7 dogs yesterday, they are all somebodies pets but roam around our village, anyway they chased him around the house to the back where he cleverly jumped into a banana tree, even I was scared, it was like a seen out of a cartoon when all the dogs are barking at the cat in the tree, wishing they could just at that minute have the power to climb, poor Oscar was terrified, I was screaming the neighbourhood down trying to chase the dogs away, eventually they scattered, but then the new mission was to get Oscar out of the tree, bloody hell he was holding on for dear life, I almost had to climb the tree myself too get him out, his claw marks are imprinted forever. Lets just say he now has 8 lives left, and seems to have learnt his lesson. So far he has no desire to venture further than the patio.

Paul and Gilly back from SA


Hello everyone

Well we back in HK, we both had a fantastic time in South Africa, so nice to see the family,catch up with friends and of course we loved the shopping. Jet lag seems to be over however poor Paul has just left for Bahrain (sunday 4pm) so he goes back to the time zone he just tried to get over, poor bugger. As for Hong Kong, well things certainly change fast, when I left it was cold and winter, now its humid and summer, the tree that had no leaves 3 weeks ago has fully grown leaves now, the bugs are out, I have never seen so many different bugs. They make a noise too, it sounds like we live in the middle of a rain forest, crickets are quiet compared to these guys, will keep taking pics of these interesting creatures. Will post some pics of SA soon
